Eat right.. your body will thank you.

I am a foodie.  I love so many different foods.  My favorites are Spanish tapas, any kind of fresh salad, and I love turkish dishes.  Many years ago while I was working retail in the Winter Park, Florida area I came across an amazing Turkish spot called Bosphorus.  It was so delicous and I fell in love with their flavors and spices.  I quickly developed a weekly habit of ordering the white bean salad they offered.

Years and years later,  I enjoy making my own version of this salad.  It is so incredibly good for you.  It is fresh and the flavors are bold.  I hope that you enjoy it as much as I do.  Make it at least once, I promise you will not be sorry.

The ingredients are as follows…

1 large can of Cannellini Beans (white kidney beans)

1 green pepper

Parsley ( I use fresh, organic)

I sweet onion

1 plum tomato, or any tomato of your choice will work

2 hard boiled eggs

1/2 cup of vinegar

olive oil to drizzle

salt

Directions:

I soak the beans in a bowl with vinegar for 2-3 hours

once the beans have soaked drain them

Boil the eggs and let sit so they cool

chop the onion very thin, add a pinch of salt to the onion, I then knead the onion ( this releases the bitterness out of onion)

Rinse the chopped onion under cold water

chop the parsley, pepper, and tomato, and combine all ingredients together

Drizzle some olive oil on top, stir and ENJOY!

This is a very great dish for diabetics.  Great source of proteins, vitamins C and A.  Also the parsley is rich in beta carotene and flavonoids, all which help protect against damage to the blood vessels and inflammation.  The onion, which is one of my favorites is useful in maintaining heart health, as well as aiding in lowering cholesterol.
