Peanut Butter Balls. Heaven.

I have this slight obsession with peanut butter. Like I could literally put it into everything and anything.  The past year I have really amped up my cooking and dietary awareness. I want to only put good things into this body of mine.  Between the Type one diabetes and thyroid issues as well as PCOS I think it is not just important its crucial.  I will save that rant for another day 😉 I really just need to share these protein balls I made the other day after being inspired from Pinterest of course!

So the best thing about this there is no baking required wahoo and its great protein and gluten free! So simple!

1 cup of Peanut butter

1.5 tbsp of honey

1 cup of rolled oats

1/2 cup of Semi sweet chocolate chips

1/2 cup of flax seeds

1/3 cup of shredded unsweetened coconut

Mix all ingredients in a bowl and refrigerate for an hour to set a bit. Then roll them into balls. I like to store mine in the freezer, they get nice and cold and hold together nice.  I have store in the fridge as well, that works great as well.  Now go make these and enjoy!     I’m trying out the protein balls! I just made a batch. I’ve made variations of those before; some have bananas or chia seeds in them. Gonna give these a try. Take care!
