I wanted to create a healthy fresh quick meal and I did it for under twenty two dollars and I am SO proud. This meal was a success and will be a repeat in my house. I wanted to not have to spend too much time in the kitchen so I bought store bought pesto, it would be great with homemade pesto as well. I hope you enjoy this simple, quick filling recipe. My recipe is for a party of 2 two.
1Box of Barilla gluten free fettuccine pasta
1 jar of pesto
1tbsp of Italian seasoning
10 Deveined and peeled jumbo shrimp
1 bundle of asparagus
1 carton of grape tomatoes or cherry tomatoes
Heat your pan to medium heat and cook the shrimp adding your spices and a teaspoon of pesto. Cook shrimp until its pink and cooked through.
Add your tomatoes cut in half to pan and asparagus to the shrimp. Cook until desired tenderness.
Cook your GF pasta or reg pasta according to product instructions, drain, and add pesto. I added a full cup as I love pesto the more the better.
Add all your shrimp and veggies onto pasta and ENJOY! EASY PEASY!
